3-4 lb. Pot Roast
2 large Garlic Cloves, sliced
1/2 tsp. Salt
1/2 tsp. Pepper
Potatoes, cut in half
Carrots, cut in thirds
Onions, cut in half depending on size

Directions:
Directions:
Make small slits in roast and insert garlic. Sprinkle with salt and pepper. Place in blue enameled roaster pan, cover and place in 300-325º oven. Bake for 3 hours, depending on thickness of meat. Add potatoes, carrots and onions. Turn up heat to 350º and bake an additional 1 hour. If roast seems dry, add 1/2 c. water. Use liquid for gravy.

The slow cooking is the secret to a tender roast. Also, you could cook the roast at a high heat for 20 minutes at first to brown it a bit.
