Fresh Apple Cake Recipe

2 1/4 c. flour
7/8 c. sugar
1/8 tsp. salt
2/3 tsp. soda
1 1/3 tsp. cinnamon
2 eggs
1/2 tbsp. vanilla
1 c. veg. oil
1/2 c. honey
2 1/8 c. diced apples

Put dry ingredients in mixing bowl and mix with a paddle.
Whip eggs until creamy yellow with a wire whisk in a small bowl. Add vanilla, oil, and honey. Mix well. Add to dry ingredients and mix well.
Fold apples into mixture.
Pour mixture into greased cake pan.
Bake at 325 for 30 mins.
Do not frost or glaze.
