2 c chopped Zucchini
1 c Flour
1 egg
1 small chopped onion
1/2 tsp. oregano (or less)
A dash of garlic; Powdered if desired.

Mix all ingredients as listed. Sir well until blended. Fry in bacon grease, one pancake at a time.

In 1981 or 1982 when we had a huge garden on our lot at Land Yacht Harbor in Olympia, while we still lived in Shelton. One year we planted 5 or 6 zucchini plants. We had so many we were carrying them in our car and giving to anyone that would take them. We met Gwen Thorsos while visiting at the Community Center on Hartstene Island. She gave me this recipe for zucchini pancakes. Then I found a recipe for zucchini relish, zapple pie, and other recipes for desserts using our zucchinis.
