Crust:
1 c. flour
1/2 tsp. salt
1/2 Tbsp. sugar
1/2 c. or a little under of butter flavored shortening
3 Tbsp. water
Filling:
3 eggs beaten
3/4 c. milk
1/4 c. sliced green onion
1/4 tsp. salt
1/8 tsp. pepper
Dash of ground nutmeg
3/4 cup chopped bacon or spinach
1 1/2 c. shredded cheese of choice
1 Tbsp flour

Directions:
Directions:
Crust: Mix dry ingredients. Cut in shortening. Roll out and put in a pie dish. Bake at 450º for 5 minutes with edges lined and 5 minutes more without lining. Take out to cool and reduce oven temp to 325º.

Filling: Beat together eggs, milk, onion, salt, pepper and nutmeg. Stir in meat or spinach. Toss together shredded cheese and flour. Add to egg mixture and mix well.

Pour the mixture into hot crust. Bake in 325º oven for 35-40 minutes or until lightly browned on top. Let stand for at least 10 minutes. Serves 6
