1 box strawberry cake mix
1 teaspoon grated lemon rind (optional)
2 packages (10 ounces each) sweetened, sliced frozen strawberries and juice, thawed
1 cup half-and-half
1 package (3.4 ounces) instant banana cream pudding mix
2 cups Cool Whip, thawed
Fresh strawberries for garnish

Directions:
Preheat oven to 350º. Grease and flour 13 x 9 inch pan.

Prepare cake according to the directions on the package, adding lemon rind if desired. Bake and cool.

Poke holes one inch apart on the top of the cake using the tip of a wooden spoon handle. Puree strawberries and syrup in blender and spoon evenly over cake, allowing mixture to soak into holes.

Make topping by preparing pudding mix according to package directions, substituting half-and-half for milk. Fold whipped topping into pudding mixture and spread on cake. Garnish with berries. Refrigerate at least 4 hours before serving. Keep refrigerated.
