Sweet Rolls with Orange Cream Frosting Recipe

Ingredients: Rolls: 5-6 c. flour 2 pkgs. yeast 1/2 c. sugar 1 1/2 tsp. salt 1/2 c. margarine 1 1/2 c. hot water 120º-130º F 2 eggs
Frosting: 3 c. powder sugar 1/3 c. shortening 1/2 tsp. shredded orange peel 1/4 c. hot orange juice. 1 tsp. lemon juice. dash salt yellow food coloring (if desired)

Directions:Combine 2 c. flour, yeast, salt, and sugar. Add margarine to hot water. Add to the flour mixture. Beat 2 minutes with mixer. Add eggs and 1 c. flour, beat another minute or until dough is thick and elastic. Stir in remaining flour gradually and knead. Use enough flour to make a soft dough which leaves the sides of the bowl. Turn onto floured board. Round in a ball and knead for 5 -10 min. Cover with elastic wrap and let rise 20 minutes. Seperate dough into two balls. Roll each ball of dough into 12 x 7 in. rectangle baking dish. Spread half of the icing in the middle of dough. Roll dough. Cut into 1 inch thick slices. Put slices into two greased 9 in. round pans. Brush with oil and cover loosely. Refrigerate 2 - 48 hours. Let rise 10 minutes, bake at 375º for 30 minutes. When cooled cover with remaining frosting.
Frosting: Combine all ingredients. Beat with electric mixer at high speed till smooth. Add more sugar if needed to make of spreading consistency. |
