1 lb ground beef, chicken or turkey
2 cups of chunky salsa
1 large onion, chopped
1 can black beans, drained and rinsed
1/4 cup reduced fat Italian salad dressing
2 Tbsp or more of taco seasoning
1/2 tsp cumin
6 to 10 whole wheat soft tortillas
1 1/2 cups of reduced fat Mexican cheese blend
lettuce, tomato and sour cream

Preheat oven to 400º
Brown the ground meat with the onion in a large skillet. Drain if necessary, add the salsa, beans, dressing, taco seasoning and cumin. Spray a glass cake pan with oil and lay in 2 or 3 tortillas to cover the bottom. Add enough of the meat mixture to cover, then repeat layers until all the meat is used. Top with the cheese. Cover and bake for 25 minutes then uncover and cook for 10 to 15 minutes longer to brown the cheese. Serve topped with sour cream, lettuce and tomato.
