3 T. butter
1 T. vegetable oil
3 red potatoes, diced
1 small head of cauliflower, break into small pieces
3/4 lb frozen chopped broccoli
1 large onion, chopped
2 stalks of celery, diced
salt and pepper to taste
5 c. water
2, 8 oz. packages of cream cheese
1 can condensed cheese soup
grated cheese for garnish

Directions:
Directions:
Heat oil and butter in a 5 qt. pot. Saute onion and celery. Add the potatoes and cover with water (just enough to cover the potatoes). Bring to a boil. Reduce heat and simmer 5 minutes. Add the broccoli and cauliflower. Cover and cook 10 - 15 minutes. Season with salt and pepper. Add 5 cups of water. Boil and reduce the heat. Simmer 30 - 40 minutes. Add cheese soup and cubed cream cheese. Stir to melt. Garnish with cheese.
