Acorn Squash
Chicken
Hot cooked rice
2 Tbsp. Balsamic Vinegar
1 Tbsp. Butter
1 Tbsp. Extra Virgin Olive Oil
2 Tbsp. Flour
1 can chicken broth or stock
2 Tbsp. milk
1/8 cup brown sugar
1/4 cup maple syrup

Directions:
Directions:
Roast squash in oven. Cook chicken in a large skillet coated with cooking spray or olive oil. When cooked through, remove from skillet. Add balsamic vinegar to pan and scrape up browned bits from bottom of pan. Add butter and olive oil and flour. Cook until combined and bubbly. Whisk in chicken stock. When thickened, add milk, brown sugar, and maple syrup. The color of the sauce should change a little and smell like maple. Cut chicken into strips and serve over rice with squash alongside. Drizzle everything with maple gravy.
