1 1/2 c. all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1 egg
1/2 c. granular sugar
2 Tbsp. Granular sugar
2 Tbsp. Butter, softened
2 Tbsp. Shortening
1/2 c. half and half
1/2 c. milk
1/4 c. buttermilk
1/4 tsp. vanilla

Combine flour, salt, and baking soda in a medium bowl and stir to combine. Set aside. Lightly beat the egg in another medium bowl and combine with sugar, butter, and shortening, mixing well until smooth. Add the half & half, milk, buttermilk, and vanilla. Mix well. Add dry flour mixture to the wet mixture while beating and mix until smooth. If you can, cover and chill overnight, though batter can be used right away. Preheat waffle iron, grease it if necessary. Spoon 1/3 to 1/2 c. batter into the waffle iron and cook for 3-4 minutes or until waffle is light brown. Makes 6 waffles.
