1/2 cup unsalted butter
8 cups thinly sliced onions
1 tsp salt
3 Tbsp flour
8 cups beef broth
1/2 cup brandy
6 to 8 slices french bread, 1/2" thick
6 to 8 slices Swiss cheese

Directions:
Directions:
Melt the butter in a large heavy pot over medium heat. Add the onions and salt and cook over low heat, stirring frequently, until the onions are deep golden brown. (about 30/40 minutes) Sprinkle the flour over the onions and stir well until blended. Pour the beef broth into a saucepan and bring to a boil. Stir into the onions and mix well. Add the brandy. Reduce the heat and cover. Simmer for 45 minutes, then add black pepper to taste.
Brush the slices of bread with melted butter and place on a cookie sheet. Bake at 350º for 30 minutes, or until nicely toasted.
To serve, ladle the soup into individual oven-proof bowls. Place a slice of toasted bread on top. Layer with a slice of Swiss cheese. Put bowls on a broiler pan, and broil for 2 to 3 minutes, or until the cheese is browned and bubbly.
