2 cans corn (drained)
2 eggs
1 1/2 c. milk
10-20 saltine cracker squares
1 slice of American cheese
Salt and pepper to taste

Directions:
Directions:
Beat eggs in small casserole dish. Add corn, milk, salt, and pepper and stir. Crush saltine crackers into corn mixture. Mixture should have extra milk to soak up crackers as it bakes so add a little more milk if it seems too dry. Bake at 400 degrees for 20 minutes. Take it out and stir. Add a little milk as needed. Bake for another 10-20 minutes. Top with thin strips of American cheese. Serve warm.
