2 15oz cans of black beans rinsed and drained
1/3 cup lime juice ( fresh is best)
1/2 cup olive oil
1 garlic clove, minced
1 teaspoon salt
1 1/2 cups frozen corn, or you can use fresh
2-3 avocados cut into chunks
1 red, green and yellow pepper,cut into pieces
2 medium tomatoes cut up
1 jalapeņo pepper chopped up finely
1 bunch cilantro chopped up

Directions:

Good to add avocado into mixture just before serving!

Put all ingredients into a large bowl mix up and let stand for 1-2 hours before serving. Add more lime juice, and spices to taste if you like. This is a recipe that you can add more or less of just about anything to. It always tastes good!

Everyone loves this. It makes a nice big bowl full. Great to serve with corn bread, tortilla chips, etc
