"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich

1 large can of Salmon
1 sweet onion, about 1/2 cup diced
1 egg
Dash of garlic
Salt to tast
One sleeve of Saltine crackers
1 large or two small lemons

Drain Salmon, chunk & check for bones.

Whip up egg & add onions, seasonings and 1 Tbsp. lemon juice.

Crush up saltines & add to egg mixture until the consistancy allows the patty to hold together well.

Cover patties with extra cracker & "fry" in butter until brown.

Serve with a lemon wedge to squeeze over the top.
