1 t. unflavored gelatin
1/4 c. cold wter
2 8-ounce pkgs cream cheese, softened
2 T. sherry
3/4 t. seasoned salt
1 12-ounce jar chopped pimentos, drained (or fresh red pepper, chopped and lightly steamed)
6 ounces king crab meat, thawed and drained
1/4 t. black pepper
1/4 c. snipped parsley

Directions:

Sprinkle gelatin over water to soften; stir over hot water until dissolved. Beat into cream cheese until smooth. Stir in next five ingredients and 2 T. parsley. Pour into a 3 cup ring mold. Refrigerate at least four hours or until set.
To serve, place hot water in a large bowl or pan. Quickly dip the ring mold up to near the rim into the water to loosen. Lift out ring mold and place a serving platter on top, then turn over to unmold. Garnish with remaining parsley and serve with your favorite crackers.
