1 (10 ounce) package frozen chopped spinach, thawed
1 (14 ounce) can quartered artichoke hearts, drained
1 (6.5 ounce) container garlic and herb soft spreadable cheese
1 cup shredded Parmesan cheese
1 (8 ounce) container sour cream
1/2 cup mayonnaise
1 (2 ounce) jar chopped pimiento, drained
6 bacon slices, cooked and crumbled

Drain spinach well, pressing between layers of paper towels. Coarsely chop artichokes. Stir together spinach, artichokes and next 5 ingredients. Spoon into a lightly greased 11 x 7 inch baking dish. Bake at 400º for 20 minutes or until bubbly. Sprinkle with bacon. Serve with crackers or corn chips or for a low-carb option, carrot sticks.
