4 cups thinly sliced baking apples
3 cups sugar, divided
2 cups all-purpose flour
1 1/2 tsp. ground cinnamon
1 tsp. salt
2 large eggs
3/4 cup vegetable oil
2 tsp. vanilla extract, divided
1 cup chopped nuts
1 stick butter
1/2 cup cream or evaporated milk

Preparation time: 40 minutes

Preheat oven to 350º.

Grease a 9 x13 inch baking pan. Combine the apples and 2 cups of the sugar in a large bowl. Add the flour, cinnamon, and salt; stir well. Beat the eggs, oil, and a tsp of the vanilla in a medium bowl. Combine the egg mixture and the apple mixture; mix well. Stir in the nuts. Spoon into the prepared pan and bake for 50 minutes or until a toothpick inserted in the center of the cake comes out clean.

Combine the remaining 1 cup sugar, the butter, cream, and the remaining 1 tsp of vanilla in a saucepan. Bring to a boil over medium-high heat, stirring constantly. Cook for three minutes. Serve warm over the cake.
