1 lb Okra, trimmed and cut 1/2 inch pieces
Salt
Vegetable oil, for frying
1tbsp. grated lime peel plus 2 tbsp. lime juice
1 tsp. chili powder
1/2 c. cornmeal
1/4 c. flour
1/2 tsp. baking powder

Directions:
Directions:
Preheat oven to 200 and sprinkle okra with salt and put in fridge for 30 minutes.
Take a medium pan and fill with enough oil to reach a depth of 2 inches and heat until its about 375 with deep-fry thermometer or guess like I do.
In a bowl place lime peel, chili powder and 1/2 tsp salt. In a bowl whisk baking powder, cornmeal then add okra. Place in strainer to shake off extra flour. Line a baking sheet with paper towels. With one batch at a time fry okra for 7 to 10 minutes and transfer to baking sheet to drain, take chili-lime mix and place in oven. Sprinkle with lime juice then serve while its hot!
