Gingerbread with Browned Honey (Poland) Recipe

1 cup honey
3 Tbsp. water
3 Tbsp. fat
5 egg yolks
1 cup sugar
41/2 cups flour
lemon peel
5 egg whites
1/3 oz. Baking soda
3 Tbsp. pre-boiled cold water
5 oz. Dried fruits (raisins, nuts, orange, peel, dates, figs, etc.)

Brown honey with spices, add 3 Tbsp. of water, cool. Rinse dried fruits, chop nuts, dates, figs and orange peel. Grease a long narrow pan. Cream fat with egg yolks, sugar and honey. Beat egg whites. Combine egg whites with yolk mixture, add flour, mix, knead for 20 minutes. Dissolve baking soda in pre-boiled cold water, add to dough, add dried fruits, mix with hands, place in pan (bake 3/4-1 hour in moderate oven). When the cake begins to brown, cover with paper. After an hour, test with cake tester. If dry after removing from cake, remove cake from oven, allow to cool in pan for a while. Then cut with knife from sides of pan, turn out carefully, and cool propped against the side of flour board. The gingerbread may be decorated with chocolate icing.
