1 can (16 oz.) salmon
2 envelopes unflavored gelatin
1 c mayonnaise
2 T lemon juice
2 tsp. horseradish
1/2 tsp. paprika
1/2 c celery, diced
1/4 c chopped green olives with pimentos
1 T onion, finely chopped
1/2 c whipping cream

Directions:

Drain salmon, reserving liquid. Remove skin and bones. Flake. Add cold water to liquid to equal 1 3/4 cups. In saucepan, soften gelatin in salmon liquid; stir over low heat until dissolved. Cool slightly. Blend mayonnaise, lemon juice, horseradish and paprika together. Stir into partially cooled gelatin mixture. Chill until partially set - fold in salmon, celery,olives and onion. Whip cream until soft peaks form. Fold into salad. Pour into greased 5 cup fruit mold. Chill until firm, then unmold.
