1 1/2lb beef, trimmed of fat and cut into 5cm (2") strips,1/2" thick
1tsp salt
1tsp black pepper
2T butter
1T olive oil
1T flour
1c beef bouillon
1 medium onion, cut in strips
3/4c sour cream
sliced mushrooms
1 clove garlic, minced
2Tbs sherry - optional

Directions:
Directions:
Melt half of the butter and stir in flour. Gradually stir in beef bouillon. Whisk to break up all lumps and continue stirring until thickened and smooth.

Heat remaining butter and olive oil in sauce pan. Quickly brown meat, garlic, onions and mushrooms on all sides.

Add meat mixture to sauce. Cook covered for 10 minutes. Stir in sour cream. Heat but don't boil.

Serve over buttered noodles.
