2/3 cup shortening
1 cup sugar
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 egg
2 1/4 cups sifted Martha White self-rising flour
3/4 cup drained, crushed pineapple
1 cup chopped nuts
1/2 cup flaked coconut

Directions:
Directions:
Heat oven to 350º. Cream shortening, sugar, and extracts thoroughly. Beat in egg until mixture is fluffy. Blend in flour, pineapple, nuts, and coconut. Drop by teaspoonfuls on ungreased cookie sheet about 3 inches apart. Bake 12 - 15 minutes. Makes about 5 dozen cookies.
