Crust:
1 1/2 C Graham cracker crumbs
1/2 C White sugar
1/2 stick melted butter
Filling:
2- 8oz. Boxes of Cream Cheese
1 pint Sour Cream
1 pint Ricotta Cheese
3 Eggs
2TBSP corn starch
1 1/2 cups white sugar
1 /2 stick melted butter
2TSP vanilla extract
1 TSP lemon juice

Pie Crust:
Crush Graham crackers( or buy that way). A food processor works well. Mix crackers, sugar and butter. Press firmly onto sides and bottom of spring form pan( I forget the sides). If you are having a little trouble with getting the crust to stick to the sides of pan, add a drop or two of water and remix with a fork. Crust will be delicate so be careful with it until filling is added. Bake at 300º for fifteen minutes.
Filling:
Mix cream cheese, sour cream , ricotta cheese, and eggs well.
add rest of ingredients and mix well. Pour into crust. Bake at 350º for one hour. Turn Off Oven. Leave cake in oven for two more hours. Cake will be in oven for a total of 3 hours. Refrigerate. Top if you like.
