1 whole chicken, cut up (3-4 lbs.)
3 T. olive oil
1 med. onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped
1 tomato, diced
1 bay leaf
2 T. salt
3 c. water
2 5-oz. pkgs. Vigo Yellow Rice mix
1 sm. jar pimentos
1 sm. can green peas

Directions:
Directions:
In a large frying pan or dutch oven, fry chicken in oil until brown. Remove chicken and all but about 1/2 cup of the drippings. Add onion, garlic, bell pepper, tomato, bay leaf, salt and a little water. Saute until onions are transparent. Return chicken to pan, add remaining water, cover and simmer 10-15 minutes. After simmering, bring to a boil and add rice, pimentos and peas--stir well. Lower heat to simmer and cook for 25 minutes or until rice is done.
