1 egg, beaten
1 pound crab meat
1 Tablespoon flour
Lemon juice from 1 lemon
Salt
Pepper
Old Bay Seasoning, just a pinch
3 Tablespoons butter
1 cup canola oil
Lemon wedges, lettuce and tomato slices to garnish

Directions:
Directions:
Combine egg, crab meat, flour, lemon juice, salt, pepper, and Old Bay Seasoning. Make cakes in a 1/3 cup measuring cup. Bring frying pan to high heat. Add oil and butter. Fry until brown and firm. Flip carefully to avoid crumbling. Then, fry that side, until brown.

I like capers in mayo, cocktail sauce or plain melted butter as a topping - although, really, you don't need anything!

This recipe came from my friend Jimmy Johnson, from Roanoke, Virginia.

Jimmy Johnson who now in Paloi, PA is one of my best friends. He was a roommate of mine my first year at UVA, and his wife Barbara Bell passed away several years ago.

In the picture of my mother and myself on my grandmother's front porch my Airborne wings are missing, as I gave them to her.
