2 egg whites
1 1/2 cup light brown sugar, firmly packed
5 tbsp water
1 tsp vanilla

Directions:
Directions:
Combine egg whites, brown sugar and water in top of double boiler and mix thoroughly. Place over rapidly boiling water; beat constantly with mixer until mixture holds up in peaks (about 7 minutes). Remove from heat, add vanilla, and beat until cool and thick enough to spread.
Makes enough frosting to cover top and sides of two 9-inch layers.

This was a favorite birthday frosting.
A second batch was used to make a candy with dollops placed on a sheet of foil and dried for a day or two.
