Chicken thighs and/or drumsticks
small can of frozen orange juice
Jar of apricot preserves (small one)
Soy sauce
Powdered ginger
Onion and/ or garlic powder (optional)
Open Pit BBQ sauce (optional)
Tin foil

Sweet and Tangy-Great in the oven or on a BBQ.

It’s a good recipe when you want to stretch your food budget, but still have something a bit special. You can use any type of chicken, with or without skin. I especially like this when I use the small drumsticks and thighs, which are usually inexpensive.

Cook chicken until about 1/2 done, about 1/2 hour at 325 degrees,
turning it a few time so that it cooks evenly.
I put a bit of butter on the skin and a bit of onion and/ or garlic powder (optional).
You can either cook on the grill or in the oven. (I think the oven is easier)
Warning! Line the baking dish with tin foil, this is very messy.

Mix in a bowl:
2/3 of a jar apricot preserves (small one)
1/4 small can of frozen orange juice, still frozen is OK.
Powdered ginger – to taste, be careful it’s strong.
A couple of tablespoons of soy sauce.

Taste it and add a bit more orange juice or apricot etc., you can’t go wrong.
I like to add about 3 or 4 tablespoons of the Original Open Pit BBQ sauce for extra zing.

Brush or spoon on and repeat often until the chicken is done.

It’s inexpensive, easy and a family favorite.
