3 eggs
1 small apple, diced
3/4 c. frozen O'Briend hash brown potatoes, thawed
1/3 c. milk
1/3 c. sour cream
1/3 c. shredded cheddar cheese
3 bacon strips, cooked and crumbled, divided
Dash of salt and pepper
Salsa, optional
Directions:
Directions:
In a small bowl, beat eggs. Stir in apples, potatoes, milk, sour cream, 3 T. of the cheese, 1 T. bacon, salt and pepper. Pour into 2-cup baking dishes coated with cooking spray. Sprinkle with remaining cheese and bacon. Bake at 350º for 30-35 minutes or until knife comes out clean after inserting.
