27 oz can green chiles
29 oz can tomato sauce
1 lb sausage

Directions:
Directions:
Brown the sausage. If there is a lot of fat drain it. Dice the green chiles and add them to the sausage. Cook together for 5-10 minutes then add tomato sauce. Simmer for 30-45 more minutes. Serve in a bowl with a dollop of sour cream and a tortilla.

Fresh roasted chilies are obviously the best but hard to find most places. Diced pork loin is more traditional but any meat will do. You can substitute diced tomatoes for the tomato sauce or just add them in as well. You can also puree the whole thing and use it as a sauce or mix it in with beans.
