3/4 c. Rice, uncooked
4 c. Milk
2 Eggs, separated
3/4 c. Sugar
1 tsp. Vanilla
1/4 tsp. Salt
1 T. Butter

Directions:
Directions:
Boil rice in water for 5 minutes. Drain. Put rice into double boiler with 2 c. milk. Cook until milk is absorbed. Add 1 1/2 c. more milk and cook until absorbed. Mix egg yolks, 1/2 c. sugar, vanilla, salt and 1/2 c. milk. Add to rice and cook until creamy. Remove from heat and add butter. Whip egg whites and add 1/4 c. sugar to make a meringue. Pour rice mixture into 1- 1/2 qt. baking dish. Spread meringue over top and bake at 375º for 5 - 7 minutes until slightly browned on top.
