8-10 c. sliced fresh peaches
2 Tbsp. lemon juice
3 envelopes unflavored gelatin
1 c. whipping cream

Directions:
Prepare or buy graham cracker crusts. If making them from scratch, save a little of the crust mixture to sprinkle on top of the pies. Peel, slice and sweeten the peaches. Stir in lemon juice and set in refrigerator. Dissolve gelatin in cold water (if it doesn't completely dissolve, heat in the microwave until it will). Pour gelatin over peaches and stir. In separate bowl, whip whipping cream and sweeten to taste. Fold the whipped cream and peach mixture together. Pour combined mixture into the graham cracker shells. Sprinkle tops with a little of the graham cracker crust. Refrigerate until set.
