3/4 cup whole wheat flour
1/2 cup regular flour
2 tbsp brown sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1 1/4 cup milk
1 tbsp cooking oil
approx. 3/4 cup chopped walnuts or pecans
cinnamon

Directions:
Directions:
Mix the flour, brown sugar, baking powder and salt together in a bowl.

In a separate bowl, whisk the egg and then add milk and oil. Whisk. Add a little more milk for thinner pancakes.

Combine wet and dry ingredients and mix until fairly smooth.

Stir in chopped nuts (or blueberries, whatever). Add a sprinkle of cinnamon to taste.

Cook pancakes on a griddle in the usual way. It's all in the wrist ;-)

This has been our Saturday morning tradition for many years. David makes them with the kids, the preparation is half the fun. Best pancakes we've ever had.
