1 lb fresh or frozen mahi mahi fillets
1/4 c fine dry breadcrumbs
1 tsp dry parsley flakes
1 tsp paprika
1/4 tsp salt
1/4 tsp coarse ground black pepper
1 tbsp melted butter
1 tbsp lemon juice
lemon slices (optional)

Directions:

Preheat oven to 350º. Thaw fish, if frozen. Combine breadcrumbs, parsley flakes, paprika, salt and pepper; set aside.

Cut fish into 4 serving-size pieces and place skin-side down in lightly greased shallow baking pan.

Whisk together butter and lemon in small bowl; brush over fish. Sprinkle with breadcrumb mixture. Bake for 15-20 minutes, or until fish flakes when tested with a fork. Garnish with lemon slices, if desired.
