1 lb. shrimp, peeled and deveined
1 Tbsp. unsalted butter
2 Tbsp. olive oil
1/2 c. red onion chpd.
2 garlic cloves, chpd.
14 1/2 oz. can of diced tomatoes, undrained
1 tsp. kosher salt
1 tsp. red pepper flakes
2 Tbsps. cream (light or heavy)
fresh basil leaves, chpd.
Parmegianno Reggiano
8 oz. penne pasta
salt and pepper , to taste

Directions:
Directions:
Melt butter in lg. pan over medium-high heat. When melted add 2 Tbsp. olive oil. Stir in onions and saute for 3-4 minutes. Add garlic and stir for 1-2 minutes more.
Add shrimp and cook for 3-4 min. until pink.
Add tomatoes and tomato paste and heat until shrimp is thoroughly cooked, stirring to incorporate all ingredients.
Remove from heat and stir in cream.
Spoon sauce over hot pasta and sprinkle with parm. and basil.
