Ingredients: 5 Lbs Red Potatoes-Peeled And Quartered 1 Cup Canola Oil 2 Egg Raw Yolks 1 Lemon Squeezed Juice 1 Tsp Salt 1 Tsp Pepper 1 Onion 1/2 Bell Pepper 1 Pod Garlic 2 Tsp Of Creole Mustard Louisiana Hot Sauce 8 Eggs Optional---Whole Green Olives

Directions:Boil Potatoes that have been quartered and the eggs in salt water for 20 minutes or until done . Prepare homemade mayonaise while they are cooking. Beat raw egg yolks with wire wisk or mixer until mayo consistency. Then gradually add oil a little at time alternately with lemon juice till it is very fluffy and thick. Keep adding oil till you have desired amount approximately 2 cups. Add seasonings and mix. Peel eggs and chop up whites and set aside. add boiled egg yolks to mayo sauce. Mix eggs, potatoes and mayo together and stir till potatoes are partially mashed. Green olives, pickles, onions and green pepper can also be added according you your taste. |
