4 boneless & skinless chicken breasts
1/2 cup Pina Colada cocktail mix
1/2 cup Panko breadcrumbs
2 Tbsp unsalted butter
1 Tbsp olive oil
2 oz white rum
1 Tbsp butter

Directions:
Directions:
In a deep dish or pie plate, marinate the chicken in the Pina Colada mix for 30 minutes. Remove chicken, reserving the marinade. Coat the chicken in the breadcrumbs, and let rest for 10 minutes. Heat oil and butter in a large skillet, on med-high heat. Fry the chicken until browned on both sides, about 4 minutes per side. Remove chicken from pan and deglaze with the rum.(off the heat) Add the reserved marinade and reduce slightly. Place chicken on plate and pour sauce over.
