5 lb potatoes, boiled, chopped
1/2 cup juice from gherkin pickles
6 eggs boiled, chopped
1 celery heart chopped
1 (sweet) onion or red onion chopped
Gherkin pickles, 1/2 chopped
Mayo and yellow salad mustard to taste

peel and boil quartered potatoes in heavily salted water just until fork tender, drain.While still warm pour pickle juice over potatoes. Allow to sit while prepare other ingredients

mix chopped egg, celery, onion, salt, pepper, pickles and mayo and mustard to taste. Amount of mayo or mustard personal taste but also depends on how dry the potatoes are.

Mix in potatoes and sit at least overnight; check for seasoning and moisture next day. Adjust as needed.
