pinch of salt
2 T. milk
4 heaping T. flour
2 tsp. baking powder
1 egg

Cut eggplant in 2 inch long slices. Coat in mixture and fry until brown.

This was made with the Japanese Ichiban eggplant from the home grown garden. Mama & Daddy thought it had a slightly milder flavor than regular eggplant.
