one 9-inch pie pasty, baked at 450 for 10 minutes
(use a quiche pan for the best presentation)
4 slices crisp bacon, chopped
4 thin slices of onion, sauteed in butter until soft
8 paper thin slices of top quality ham, shredded
8 paper thin slices Swiss cheese
3 or 4 large eggs
1/4 t. dry mustard
1 c. light cream, heated
nutmeg

Directions:

Sprinkle the bacon and onion over the bottom of pie crust. Add 1/2 the shredded ham, 4 slices of the cheese spread over the ham. Add rest of ham and cheese on top. Beat the eggs and mustard, add the hot cream, and continue beating. Pour over the ham and cheese; let stand 10 minutes. Sprinkle a tiny bit of nutmeg on top and bak at 350 until custard is set.

This classic French recipe is a shining example of simplicity in fine food. Make it exactly as the recipe states and you will be rewarded with a lovely quiche. My mom made this quiche many times over my teenage years.
