2 lbs of lean ground beef
1/2 of med onion, chopped
1 anaheim pepper or chilies
1 bundle of cilantro, chopped
1 can of Old El Paso Enchilada sauce
1 can of pinto beans
1 packet of taco seasoning
2 c of shredded cheddar cheese
1 small can of sliced black olives
8 - 10 med flour tortillas

Directions:

Preheat oven to 375º. Grease a 9x10 pan.

Brown ground beef, with onion, peppers over medium heat. When meat is almost brown, stir in the chopped cilantro. Stir in taco seasoning,1/3 can of Enchilada sauce, and 1/2 can of pinto beans.Let simmer for 2 mins on med.heat.

Fill tortillas with meat mixture, roll and place in pan. After you have filled the entire pan with enchiladas, top with beans. Then pour the rest of the enchilada sauce over beans and enchiladas. Sprinkle with cheese and olives.
Bake in oven for 20 mins.
