White Chili Recipe

2 T. olive oil
2 chicken breasts or more
1/2 cup chopped onion
2 cups chicken broth (or one can)
2 4 oz. cans chopped green chilies (mild or hot)
2 15.5 cans Great Northern beans, slightly drained
2 11 oz cans white corn undrained
2 tsp. ground cumin
2 tsp. garlic powder
1 tsp. ground oregano leaves
1 tsp. ground cilantro leaves
1/2 tsp red pepper
Shredded cheese

Saute onion in oil over med heat. Stir in broth, green chilies and all spices. Simmer 30 minutes. Stir in chicken, beans, ad corn. Simmer an additional 20-30 minutes. Garnish with cheese or sour cream.
