1 medium eggplant
1/2 cup mushroom soup
1/2 cup mayonnaise
1 egg, beaten
1 tbsp. grated onion
1 cup American cheese, shredded
3/4 cup crushed crackers
1 tbsp. oleo

Directions:
Directions:
Peel, dice, and cook eggplant in boiling salted water about 15 minutes. Mix soup, mayonnaise, eggplant, egg, onion, cheese, and crushed crackers. Pour melted margarine on top. Bake for 25 minutes at 350º.

Mama modified this by omitting the soup and mayonnaise. She also layered the eggplant mixture, cheese, and crackers on top. She froze many eggplant casseroles.
