4 cups Basmati rice
Pita Bread or Tortilla
5 slices butter

Directions:
Directions:
Wash rice 3 - 4 times in warm water
Soak the rice in hot water, add 5 tablespoons salt; soak 2 hours
in 2/3 pot of water; drain
Add water to a pot ; when boiling, add rice and cook al dente'
Drain rice in a colander and rinse with cold water
To a pot over medium heat, add 3 T oil and 3 T water
Open the pita bread and place over the oil and water, lining the bottom of the pot with the bread
Pour the rice over the bread
Add 5 slices butter to the rice, cover and cook 15 minutes until steam rises from pot
Remove cover and place a paper towel over the rice and return cover
Heat on low 30 minutes
Bread will be crispy (called tahe dig)
Serve with Korsht Ghormeh Sabzi
