1/2 lb. Bacon, diced
1/3 cup bacon drippings
1 Tbsp. Flour and sugar
1 tsp. salt
1 tsp. celery seed
1/2 tsp. black pepper
3/4 cup chicken broth
1/4 cup white vinegar
6 cup hot sliced potatoes
1/2 cup thinly sliced green onions (with tops)
Minced parsley

Directions:
Directions:
Cook bacon until crisp. Drain on paper toweling. Heat the bacon drippings in a large heavy skillet. Blend in flour, sugar, salt, celery seed and pepper. Gradually add broth and vinegar. Cook and stirring constantly, until the mixture is slightly thickened. Pour sauce over potatoes, onions and half the bacon bits. Toss gently. Turn into serving dish. Garnish with remaining bacon and minced parsley. If sauce is thick, it can be diluted with water. (Keeps in refrigerator for several days and can be reheated.)
