Ingredients:  
2 cup grated potatoes, drained
2 eggs
1 tsp. salt
2 cup unbleached flour
1/2 onion, chopped
1/4 lb. Butter, melted

Directions:
Directions:
Add eggs to drained potatoes. Stir and add salt and flour. Drop by tsp. into two quarts salted boiling water. Cook until dumplings rise to surface. Drain in colander. Sauté onion in butter. Pour over hot dumplings.
