4 skinless boneless chicken breast
1 pkg mild taco seasoning
5 cups chicken stock
2 tbsp butter
2 cans cream of chicken soup
6 flour tortillas
2 cups shredded cheddar
Hot cooked yellow rice
Directions:
Directions:
Place the chicken into a 3 quart slow cooker. Reserve 2 tbsp taco seasoning. Sprinkle the remaining taco seasoning over the chicken. Pour 3 1/2 cups stock into the cooker.
Cover and cook on LOW for 6 hours. Remove chicken to a cutting board. Using 2 forks shred the chicken
Heat the butter in a 3 quart saucepan over medium heat. Stir in the reserved taco seasoning, remaining stock, and soup. Stir in the chicken. Remove the saucepan from heat.
Heat the oven to 350º. Layer half the chicken mixture, half the tortillas, and half the cheese in a 3 quart shallow baking dish. Repeat with the remaining chicken mixture, tortillas and cheese.
Bake for 30 minutes. Serve over rice.
