1-1/2 Lean Ground Beef
1 chopped onion
4 or 5 cans chopped olives
1 cup grated Colby cheese
1 cup grated mild cheddar cheese

sauce:
1 large can Las Palmas Enchilada Sauce
1/2 cup water
1 Tablespoon flour
1/2 tsp. salt
1 Tablespoon chili powder
corn tortillas
whole olives



Directions:
Directions:
mix flour, salt, chili powder, 1/2 cup water and stir
until smooth (no lumps). Add to enchiladas sauce and keep stirring as you are adding it to the enchilada sauce. Heat and set aside but keep on warm heat.

Enchiladas:
Saute Beef and onions and cool. Add olives and cheeses and set aside

Wrapping Enchiladas:
Warm tortillas in the microwave oven and dip edges in the sauce to make sealing easier. Fill tortilla with meat mixture and fold over. Put in large Pyrex dish, when the dish is full of the tortillas cover with enchilada sauce and mixture of cheeses. Top each enchilada with 2 whole olives..

bake at 350 degrees for 25-30 mins
