1 tbsp butter
1 lg onion chopped
3 cloves garlic minced
2 tsp italian seasoning
1/2 tsp salt
1/2 tsp pepper
6c chicken broth
4 medium zucchini, thinly sliced
8oz can of mushrooms
2/3c instant mashed potatoes
parmesan cheese

Directions:
Directions:
Melt butter in large sauce pan, saute onion & garlic for 5 minutes. Add italian dressing, salt, pepper, broth & zucchini. Simmer until very tender (about 20 minutes). Let cool slightly, then puree in blender. Add instant mashed potates and mushrooms. Simmer until thickened and creamy. Serve with parmesan cheese.
