3 red ripe tomatoes (about 2 lbs.)
2 tsp. finely minced garlic
1 c diced onion
1 c coarsely chopped green pepper
1 c diced cucumber
fresh ground pepper, to taste
pinch of cayenne
1/4 c wine vinegar
2 T olive oil
1/2 c V-8 juice
croutons
3/4 c white grapes

Directions:
Directions:
Trim core from tomatoes. Chop and put in food processor. Add garlic, onion, green pepper and cucumbers. Put in generous amounts of both ground pepper, vinegar, oil and V-8 juice. Blend the ingredients, but leave a little coarse. Pour into a bowl and chill. Serve with diced cucumber, croutons, onion and green pepper.
