2 ½ lb pork tenderloin
Sea salt & freshly ground pepper to taste
2 tbsp chopped fresh thyme
2 tbsp chopped fresh rosemary
1 tbsp butter
1 c apple cider, divided
4 small granny smith apples, peeled, cored, & sliced ½ inch thick
2 tbsp honey
2 tbsp balsamic vinegar

Preheat oven to 400 degrees. Rinse pork, pat dry. Season with salt and pepper. Coat on all sides with herbs. Melt butter in a large ovenproof skillet. Add pork, cook over medium-high heat until well browned on all sides. Add ¾ cup cider to the skillet and cook until most of the liquid has evaporated. Add apples to the skillet. Stir together the remaining ¼ cup cider, honey, and vinegar; pour over the pork and apples. Place skillet uncovered and cook 20 – 25 minutes.
